For your personal use or do you use them for catering or something?
Anyhow, you need to press on your tortillas when you flip them, so they can sort of puff up and separate top and bottom, a little … supposed to make them easier to roll.
That is not Carnitas, sorry.
esas no son carnitas, no mames! you have no idea of what you´re doing. You have some great recipes but definitely thats not one of them…. If you come to Mexico let me know and ill take you for some good food.

It's not assada (beef), but carnitas (pork)

As an ex-Patt Britt living in Los Angeles where Mexican food is amazing my favorite style of pork to cook has to be Yucatecan style "Cochinita Pibil, or Puerco Pibil". You need to research it and try it, check out Rick Bayless, he won Iron Chef with his version of this dish. Make sure you include the pickled red onion that goes with this dish so well. Hot sauce is added in the final taco as you see fit.
I only watch Pitmaster X if something is INSANE. And it was!

Carnitas are braised in pork lard. Using pork bbutt or shoulder is fine, but they are better when you use pork belly and ribs as well. And those tortillas are not good. Too thick and done with arepa flour. For real mexican BBQ you need to do a goat on a stone pit, or you could do cabrito (roasted goat)
I love your channel, but this is a disgrace.
Carnitas are a "confit" cooked on its own fat, for something like a bbq, we have barbacoa(I assume that the name comes from bbq) and cochinita pibil. Both cooked in a pit for a lot of hours.
You ate arepa venezeolana, no tortillas, but i think arepa is better

Insult to mex cuisine this is, but i understand its a way to get rid of excess 70kg of pulled pork from a plain stupid cook (you need more friends for such volume, could have done that by doing carnitas properly)

Long time watcher and very very disappointed I’m sorry to say that is nothing that resembles Carnitas Where is the pork stomach and the Manteca that’s is far as I will go with my recipe again very disappointed I’ll continue to watch but it’s a scar that will not heal lol
