My brother @nasseramics requested this one, and it was incredible!!
Ingredients:
* 75/25 ground beef, formed into 3-4 oz balls
* 1/2 cup @kewpieusa mayo
* 1 tbsp gochujang paste
* Juice from 1/2 a lime
* @dudesgourmet Korean seasoning
* @traderjoes Korean bbq sauce
* Havarti cheese
* Eggs
* @kerrygoldusa Butter
* Brioche buns
* Butter lettuce
* Kimchi pickles
1. Start by making the Gochujang aioli by mixing together the Kewpie mayo, gochujang, and lime juice. Store in the fridge for atleast 30 minutes to let the flavors meld.
2. Heat a griddle or pan to medium high heat and form the beef into 3-4 oz balls. Then place each ball down and smash into the griddle or pan until flat.
3. Season each patty with a Korean seasoning before flipping over and brushing the top of the Pattie’s with Korean BBQ sauce before placing down the cheese to melt.
4. Once the cheese is melted you can remove the Pattie’s, toast your buns, and pan fry an egg if you want! I recommend butter basting and a very runny yolk.
5. Start putting the sandwich together with a toasted bun, some gochujang aioli, kimchi pickles, butter lettuce, 2 Pattie’s with cheese, the fried egg, and a top bun that’s covered in more aioli!

I think you should have replaced the lettuce with actual kimchi. And to capture the korean flavors i would have added some form of garlic/ginger/sweetness to the mayo with that gochujang. Ginger, garlic and sweetness is extremely common in Korean BBQ. (I worked as a korean BBQ chef for many years). You could even go as far as making your own Sogalbi shortrib pattys.
