    The oyster appears grey and more translucent due to a lack of proper nutrient availability because the oyster was completely submerged in black mud, ( a silt which is composed of minerals, clay and dead sea life) on the bottom of the oyster rock/river, the overwhelming sulphur smell is from the oyster trying to filter the mud it was sitting in, causing the oyster to fill itself with mud.
    If left long enough in the mud it will actually suffocate the oyster and kill it.
    That one was still alive, good call on not consuming it as the mud inside can contain bacteria.
