Simply Dupe: Spaghetti alla Nerano
Serves 4 | Prep 15 mins | Cooking 25 mins

Ingredients
500g Coles Simply Spaghetti
โ…“ cup (80ml) Coles Simply Olive Oil
40g Coles Simply Salted Butter
4 zucchini, thinly sliced
2 tsp Coles Minced Garlic
2 tbs lemon juice
โ…” cup (50g) finely grated Coles Parmigiano Reggiano
Chopped flat-leaf parsley, to serve
Lemon zest, to serve

Parmesan crumb
20g Coles Simply Salted Butter
ยฝ cup (35g) Coles Simply Breadcrumbs
โ…“ cup (25g) finely grated Coles Parmigiano Reggiano

Method
1. Cook pasta in a saucepan of boiling water following packet directions or until al dente. Drain well, reserving 1 cup (250ml) pasta water.
2. Meanwhile, heat half the oil and butter in a large frying pan over medium-high heat. Cook half the zucchini for 5 mins or until golden and cooked through. Repeat with remaining oil, butter and zucchini. Return zucchini to the pan with garlic, pasta, pasta water, lemon juice and parmesan. Stir to combine. Season.
3. To make the parmesan crumb, heat butter in a small pan over medium heat. Add breadcrumb and parmesan, cook, 5 mins until golden.
4. Divide pasta evenly among 4 serving bowls. Sprinkle with parmesan crumb, parsley and lemon zest, to serve.
