Quick and easy, great with a side of garlic bread.

🌱Ingredients (feeds 4 – takes approx 45 mins):
– 300g orzo (cooked as per pack instructions)
– good glug of olive or rapeseed oil
– 1 medium onion (diced)
– 4 cloves garlic (thinly sliced)
– 1 tbsp tomato puree
– handful chopped parsley
– handful chopped fresh oregano or use dried
– handful sliced black olives
– 2 cans plum tomatoes
– pinch of sugar
– salt & pepper to taste

🍅1. Heat oil in a wide pan, once hot, add the onions and garlic and gently fry until soft.
🍅2. Add tomato puree, parsley and oregano, cook out for 1 minute, then add plum tomatoes, olives and some water from rinsing out the tomato cans.
🍅3. Leave on a medium heat and start breaking up the tomatoes with a spoon.
🍅4. Season well and add a pinch of sugar. Let the tomatoes cook on a low heat for approx 15 minutes.🍅5. Add cooked orzo, mix and heat through, top with feta and serve.
