Watching the lady chef at the Irish pub make her house spice mix reminded me of my Moroccan friend making Ras el Hanout. Sometimes it's surprising to see spices going in that you wouldn't think go together well.

At 55:39 in the Cheesesteak segment, Sonny: "a little bit of butter on the side", Guy: "always better with butter.", and then Guy: "the kicker on that is the butter."
It probably was pretty good with the butter "kicker", but just think how much better it might have been with some beef tallow, or better yet, the particularly delectable and luxurious triglyceride (fat) that renders from roasting beef bone marrow.
