  1. Oh, no! You can't use dairy to soak matzahs and then fry them in schmaltz! Are you kidding me? Seriously?! And then you put sour cream on top? No, no, no!!!! Never mix milk and meat in a kosher or even kosher style recipe! Oh, no!

  2. I love more variety of textures when I eat, so I add milk to the eggs to make the batter more runny, but soak the matzo for a much shorter time. Additionally, I go in at high heat, to give the egg a chance to develop a slight crisp. I think it makes for a more interesting mouthfeel.
