Tteokbokki kimchi noodles (bibim guksu) #shorts
Kimchi mixed noodles (bibim guksu) w/ tteokbokki sauce recipe below:
1 serving:
(Feel free to adjust measurements to taste)
2-3 tbsp leftover tteokbokki sauce
2-3 tsp rice vinegar or apple cider vinegar
1-2 tsp kimchi brine
1-2 tsp sesame oil
1/2 cup chopped kimchi
100g (about a coin-sized bundle) Korean wheat noodles (somyeon)
Roasted sesame seeds, for garnish
1. In a bowl, mix the cooled tteokbokki sauce with vinegar, kimchi brine, sesame oil, and chopped kimchi. Set aside.
2. Boil the noodles according to package instructions
3. Drain and rinse the noodles thoroughly under cold water
4. Toss the noodles with the spicy kimchi sauce until evenly coated.
5. Garnish with roasted sesame seeds and serve immediately.
Optional: Top with sliced cucumbers, pork belly, or a soft-boiled egg
