Tuscan Chicken | The Ultimate Chicken Dinner?



Packed with flavour, my Tuscan Chicken in Creamy Sun Dried Tomato Sauce is the ultimate chicken dinner. Serve with pasta, potatoes or just a big hunk of bread to dip into that creamy sauce.

Ingredients:
4 chicken breasts
1 large egg
3 tbsp plain all-purpose flour (replace with gluten free flour blend if needed)
1/4 tsp salt
1/2 tsp freshly ground black pepper
1/2 tsp dried oregano
1/2 tsp dried thyme
1/2 tsp dried paprika
1/4 tsp garlic salt
3 tbsp olive oil
1 brown onion peeled and sliced
2 cloves garlic peeled and minced
1/2 tsp dried oregano
1 tsp paprika
1 cup (160g) sun dried tomatoes I like the bright red one from the deli counter
1 red bell pepper de-seeded and sliced
1 tbsp tomato puree (paste)
1/3 cup (90ml) white wine
1 cup (240ml) chicken stock (use bouillon for gluten free)
pinch of salt and pepper
1/3 cup (90ml) double (heavy) cream
1/2 packed cup (50g) parmesan cheese grated
3 packed cups (90g) fresh baby spinach
1 tbsp chopped parsley

  1. TUSCAN CHICKEN (Double Recipe )
    Set oven to 320
    Dip chicken breast in shallow bowl with 2 slightly beaten eggs – then drudge in another bowl with 6 TBSP APflour with 1/2 Salt & Garlic salt, with 1 tsp of Black Pepper Oregano,Thyme & Paprika . Remove chick from pan on cookie sheet -place in oven 10 min while making sauce .
    Heat 4 TBSP olive in large fry pan -add sliced onion 3-4 min med to high heat add 4 cloves garlic -1 tsp oregano 🌿2 tsp paprika -2 sliced red bell pepper-2 cup dried tomatoes 🍅-4 TBSP tomatoe paste . Stir gently 2min. Pour in 2/3 c white 🍷 wine & 2 cups chicken stock . Bring to boil & simmer 5 min. Add 2/3 c heavy cream …1 C grated parmasean cheese ..6 cups baby spinach …Stir till spinach wilts …add chicken to sauce cook another couple min..

  2. Love seeing cloudy stock! My home made is always on the cloudy side and I find I like it much better that way but store bought and a lot of tutorials I watched have it crystal clear.

  3. Here is what I would do differently, either use tenderloin or cut my chicken breast in smaller pieces. Cook it in the sauce for like 45 minutes, add chicken stock if the sauce loses too much water. After 45 minutes then add the spinach and parsley in. This will allow the chicken to cook longer and become more tender and let the flavors of the sauce continue to become richer. Just my thoughts, great recipe!!!

  4. I made this for dinner tonight and it’s great my husband loves it but he says I could make the sauce creamer so I’ll add more heavy cream and a little flour I also seasoned my meat first adding Lawry’s and all purpose just wonderful I can’t do without Lawry’s lol
