This ain’t your lunch lady’s sloppy joe. This is the Gourmet Sloppy Joe Melt-rich, cheesy, and unapologetically messy. We’re talking buttery toasted sourdough, aged white cheddar, a beef-and-sausage filling so savory it needs its own legal team, and a finish that’ll make you sayβ¦ send napkins.

π§Ύ Ingredients
For the Sloppy Joe filling:
1 lb 80/20 ground beef
Β½ lb mild Italian sausage
1 tbsp beef tallow or olive oil
Β½ sweet onion, finely diced
1 shallot, finely diced
3 cloves garlic, minced
1 tbsp tomato paste

cup ketchup
2 tbsp Worcestershire sauce
1 tbsp Dijon mustard
1 tbsp dark brown sugar
1 tsp smoked paprika (aka my ride-or-die)
1 tsp soy sauce
Pinch red pepper flakes (optional)
ΒΌ cup dry red wine (or beef broth)
Salt & pepper to taste
1 tbsp balsamic vinegar (to finish)
1 tbsp cold unsalted butter (to finish)
For the melt:
Thick-cut sourdough
Aged white cheddar slices (2-4 per sandwich)
Garlic Parmesan basil butter (store-bought or regular butter works!)

1lb of Jimmy Dean sausage browned, 2 jars of Kraft Old English cheese mixed until melted, then put ~1tbsp on cocktail size bread slices and bake for ~15 minutes at 400Β°.
Man, to think this is all because Funhaus closed down. Funhaus walked so this sandwich could run…straight into my mouth.

This looks amazing and I know how important the onions are in the meat but I hate the texture in my meat (lol). Could I take the onions out before the garlic cooking or am I just wasting time?
