Ingredients:
• 1 kg chicken, cut into serving pieces
• 2 potatoes, peeled and quartered
• 1 carrot, sliced
• 1 bell pepper, sliced
• 1 can (200g) tomato sauce
• 1 onion, chopped
• 3 cloves garlic, minced
• 2 cups water or chicken broth
• 2 tbsp soy sauce
• 1 tbsp fish sauce (optional)
• 1 tbsp cooking oil
• Salt and pepper to taste
• Bay leaves (optional)
Preparation and Cooking Process:
Step 1: Marinate the Chicken: In a large bowl, combine 2 tbsp soy sauce, 1 tbsp lemon juice or calamansi juice (optional ,and 3 minced garlic cloves. Add salt and pepper to taste. Let it sit for 15-30 minutes.
Step 2: Sautéing: Heat oil and sauté garlic and onions until fragrant. Add the marinated chicken and cook until it changes color.
Step 3: Adding Ingredients: Add tomato sauce and water/chicken broth. Stir well.
Step 4: Simmering: Add bay leaves (if using) and let it simmer for 20-30 minutes until the chicken is tender.
Step 5: Adding Vegetables: Add the vegetables and cook for another 10-15 minutes until they are tender.
Step 6: Final Seasoning: Adjust the seasoning with salt and pepper. Add fish sauce if desired.
Step 7: Plating and Presentation: Garnish with fresh herbs if desired and present the final dish.
