Chocolate Whipped Buttercream Frosting Recipe:
This recipe makes enough to frost 12 cupcakes, a 9″x13″ sheet cake or 2 layers of 8″ cakes.
✅Ingredients:
100 grams icing sugar or confectioner’s sugar
20 grams cocoa powder
50 grams softened butter (Check Notes)
50 grams cream cheese, softened and at room temperature
250 grams whipping cream (at least 35% fat), chilled
Notes:
1. I’ve used salted butter in this recipe, but you can use unsalted butter as well. If you use unsalted butter, you can also add 1/4th teaspoon of salt when mixing the butter and cream cheese mix.
2. After adding the whipping cream, mix for 10 seconds on medium speed first. Then stop the stand mixer (or electric beaters, if you’re using that), scrape down the sides and bottom to ensure the unmixed chocolate bits are all well combined. Then mix on medium speed for 1 minute and check for consistency. Ideally, it will be ready.
3. Do NOT use a higher speed when whipping the buttercream after adding whipping cream as it can over-whip very easily. Go on a medium speed for 1 minute, then if you’d still like to go further, only mix at 10 second intervals on a low speed, checking for consistency constantly.
