Ultimate Crispy Pork Belly in the airfryer at home. With some jeow som sauce. It’s so crispy and the jeow som sauce is fresh and flavourful to cut through the richness of the pork belly.

For the airfryer pork belly, you need
1 piece of pork belly with the bone out.
Salt (ideally large salt, but table is fine)

For the Jeow som sauce you need
1/2 teaspoon of dried chili flakes (but if you have fresh that’s great and use that)
1 -2 cloves of garlic
A small handful of chopped coriander
3 tablespoons of lime juice
1 tablespoon of fish sauce
1 tablespoon of brown sugar

For the pork belly score it if it has not already been scored in the skin. Make a little tin foil bed for it, and cover the top with salt. Put it in the airfryer for 40 mins at 185c. When it finishes remove all the salt from the top and put it back in for 10-15 mins at 220c

For the jeow som sauce, grate the garlic into a bowl, add the chill and chopped coriander, the liquids, and sugar.

And when your pork is done let it rest for 5 mins and then serve it up with whatever you like, I had mine with some chunky cucumber and that zingy jeow som sauce all over the top.
