  1. It doesn’t get easier or quicker than this chicken thigh dish. It’s a great one pan meal and this is how you make it.
    Ingredients:
    1 1/2 pounds skinless boneless chicken thighs
    1 medium roasting eggplant
    16 oz. baby potatoes
    1 red bell pepper
    1 orange bell pepper
    1/2 red onion
    4-5 cloves of garlic
    8 oz. carrots
    For the spice rub,
    In a bowl, Mix:
    1/2 tbsp salt
    1 tsp black pepper
    1/2 tbsp paprika
    1 tsp onion powder
    1 tsp garlic powder
    1/2 tsp ground ginger
    1 tbsp oregano
    1/2 tsp cayenne pepper/ optional if you like it a little spicy
    4 tbsp tomato paste
    4 tbsp olive oil
    Set aside.
    Preparation:
    Dice the vegetables into big bites, spread in the baking pan. Add the chicken thighs on top and slather the spice rub all over the chicken and vegetables. Add 1/2 cup of water to the pan and bake uncovered at 400 degrees F for 40-45 minutes. The chicken and vegetables will be juicy and tender. Enjoy!
