Don’t toss out those fish heads. Soup! Salads! Grilled! You can make great meals out of what many people toss out. Chef Tony shows you how the head of the fish is not only useable, it is actually one of the best parts of the fish. Fish stock, fish salad, or a grilled meal in itself – it’s all possible, and on top of that, it’s extremely cheap to get at the fish market. What do you think – Delicious? Gross?   1. It looks like the liver is in the head area — is that edible?? And that tubular thing — I think that is a part you said leads to the stomach and is edible, but mushy? Sorry for all the questions, but I don't want to get sick ingesting something that I shouldn't. 🙂 Thanks so much for the previous reply!!

  2. Thanks Tony. I will be a new angler, come Spring, and was watching videos on how to fillet. I was surprised by how many fisher waste this (although maybe I shouldn't be). You can see the amount of meat in the head! My 12 year old daughter said, "no way" to the eyeballs 😉

  3. Thank you. Just de gilled and cleaned 7 Black Sea bass heads and bones. Adding Stock and heads to my palette. Fun stuff. Got to celebrate the whole fish or animal. Sign of a true chef knowing how to make it all fantastic.

  4. Love fish heads! Love the eyeballs. Your daugher rocks! Love the meat and fat behind the eyeballs. Tons of great flavor and meat in a fish head. Its funny that the vast majority of Americans are absolutely mortified about eating a fish head, but their failure to celebrate the fish head means more for the true fish lovers!
