Vegan Chipotle Mayo Nut-Free

** I have stored this mayo for 5 days with no issues, and it probably could be stored longer.
If you are concerned with spoilage, I suggest reducing the ingredients to make half of this
recipe.

INGREDIENTS

½ cup cannellini beans
½ cup sunflower seeds
¼ – ½ cup water
1 tbsp apple cider vinegar
2 tsp lime juice
1 tsp Dijon mustard
1 date
1 tsp garlic granules
½ tsp onion powder
1 tsp chili powder
1 tsp smoked paprika
¼ tsp Chipotle powder
¼ -½ tsp salt or to your taste

INSTRUCTIONS

Place all the ingredients in a high-speed blender. Add water gradually. Blend until mayo-like consistency is achieved.
