Vegan Pulled BBQ!



Pulled BBQ Sandwich

INGREDIENTS

1.5 lbs oyster mushrooms (or King/Trumpet Oyster)
2 HV Millet Buns (
Optional:
Β½ cup HV Coleslaw (

BBQ Sauce

1 1/2 cups tomato puree
1/3 cup apple cider vinegar
1/3 cup date syrup
1/4 cup coconut aminos
1 tbsp smoked paprika
1 Tbsp mustard powder
2 tsp onion powder
3-4 cloves garlic
1 tsp cumin
2 tsp black pepper
Optional:
1 tsp salt or to taste

INSTRUCTIONS

Prepare the BBQ Sauce by combining all the ingredients in a saucepan over medium heat. Bring to a simmer. Simmer for 10-15 minutes. Let cool.

Prepare the oyster mushrooms by cutting off the base of the oyster mushroom. Pull the petals from the oyster mushroom cluster. Tear each petal lengthwise.

Preheat the oven to 425 F.

Add β…” of the BBQ sauce to the pulled mushrooms and mix. Spread the coated mushrooms onto a parchment-lined baking sheet. Bake for 15 minutes and mix the mushrooms. Cook for another 15 minutes. Add remaining BBQ sauce to the cooked mushrooms and mix.

Build your sandwich by adding some HV coleslaw to your bun, top it with the pulled BBQ mushrooms. Enjoy!

  2. It’s my new favorite β€œmad” food scientist inventing another dish I couldn’t fathom. I’m still stuck on the idea of cooking with NO OILS! Didn’t even know this was wholly possible but there are so many clever work-arounds that by the end of the video, I’m never thinking it’s missing anything! I never knew mushrooms were so versatile & wish I had this knowledge back when I was vegetarian and vegan cheese tasted like metal. πŸ˜…
