What a delicious looking recipe! Here's a tip for using up leftover parsley, if you buy a bunch for something. If you eat green salads, just add a lot of the parsley into your green salad when you toss it! It adds an interesting texture and of course that strong vegetal taste of the parsley. It's a very refreshing riff on the standard green salad.
