This is good knowledge to have, perhaps for some people, but in my kitchen, it is not a burden to have different fermented dairy products on hand for various baking projects. Even if having Greek yogurt on hand, exclusively, performs basically the same in terms of leavening and rising power, the fact is that you can't substitute the flavor of things like buttermilk with just one of these products. And they never last long enough to go bad anyway, so why not

So I buy buttermilk to use 1/2 cup at a time & end up tossing the rest. But at least the remaining Greek yogurt will get eaten in my household. Thanks!

The Fage 5% is my favorite too. It's so good that I can eat it plain without anything added for sweetness. I didn't think that was possible.
