PINK SUGAR COOKIE CAKE POP ICE CREAM CONES 🍦

Ingredients:
1 package pink frosted sugar cookies
8oz cream cheese (softened)
6 ​⁠@joyconeco.icecreamcones4867 ice cream cups
1 cup white chocolate chips
dab of coconut oil
red food coloring
rainbow sprinkles

Instructions: 
In a large bowl, mash sugar cookies with room temperature cream cheese and form a dough ball. Separate small sections of cookie dough and form into hollow ice cream cups and flatten at the top. Additionally, form 6 small balls with remaining cookie dough and allow both dough balls and cups to set in fridge until firm. In a small microwave-safe bowl, microwave white chocolate and coconut oil for 30-second increments, stirring each time until melted with a glossy consistency. Add a few drops of food coloring and mix until light pink color is achieved. Once cups and dough balls are firm, spread 1 teaspoon of chocolate on tops of filled cups and place 1 dough ball on top, using chocolate as “glue” to hold it in place. Allow assembled cups to set in fridge until firm, then dip in chocolate and sprinkle with rainbow sprinkles. Allow cups to set in fridge until chocolate has hardened and enjoy! 😋
