Coconut Mango Chia Pudding
Ingredients:

1 can (14 oz) coconut milk
1/2 cup chia seeds
2 tablespoons honey or maple syrup
1 ripe mango, diced
1 teaspoon vanilla extract
Directions:

In a bowl, whisk together the coconut milk, chia seeds, honey, and vanilla extract.
Let the mixture sit for 5 minutes, then stir again to prevent clumping.
Cover and refrigerate for at least 4 hours or overnight.
Serve topped with diced mango.
