Water + Semolina = Pasta 2 Ingredient Pasta Recipe. This is the easiest 2 ingredient no egg pasta recipe there is. With this recipe you can make 2 ingredient spaghetti noodles using just water and semolina flour. No egg pasta noodles recipes can easily be dried and saved for later.
Ingredients:
500g durum semolina + some for dusting
250 – 300 mL water
Method:
Mix water and semolina into a ragged dough.
On a lightly floured (semolina) bench, knead dough for 8-10 minutes.
Rest dough for 10-15 minutes before shaping.
Shape or roll and cut into your desired pasta shapes.
This pasta can be dried and stored.

Can you cook it immediately and not dry and store it?
5.99 cups semolina to 2.54 cup water or 6 cups to 2 1/2 cups + about 2 teaspoons water. Roughly for our seriously none metric friends. I tried to do the conversation for you. Hope it helps.

April 2020 oh yeah I remember that month. Fuq that month. The 55-60% ratio is a great tip. Iβve seen a lot of videos where people throw out numbers and I realize now theyβre always in this range.

My dough was way too wet. I think I'll try it again with less water. I make egg pasta all the time and this dough was so different. Utter failure, but I'll try it again with less water.
Brilliant simple recipe. Did everything exactly but when I put on the drying rack, 5 minutes and they break falling off the rack, any idea what went wrong. Same exact measurement as you did. 60% hydration.

Hello, Thank you for the recipe. I made the pasta yesterday i used extra fine semolina (500 g) with 300 g water. However my dough is very stretchy . When i use my pasta machine ( similar to yours) i was unable to cut the pasta into tagliolini . It was sticking to everything despite dusting it with extra semolina . Do you have an idea what could ebe the problem ? is it the fine semolina that requires less water ?
How long will this last after itβs dried?

Pasta Grannies is greatπππ, and yes they make it look so easy, but considering the 50/60/70/80+ years experience they have making pasta on a nearly daily basis I bet you could blindfold them and they could still make the shapes simply by muscle memory and feel. π€£

When I first got a pasta machine I wanted to try it out but had no semolina or bread flour. Used AP flour, kneaded it well enough and then let it rest for a while before rolling it through the machine. Turned out well enough.
No egg? No pasta! Pffftt!
