  1. This isn't wrong, but if you're going to do zaru-soba, or cold buckwheat noodles, you should go for 100% buckwheat as the flavor will be somewhat diluted by chilling it. For yakisoba or similar dishes that are served warm or are further cooked, obviously go for the ones with more structure. In hot weather though, chilled 100% buckwheat noodles with a good dipping sauce, some nori and sesame, and maybe some tofu or room temperature tempura is pretty amazing.
