Those honey carrots would have been fine with just less heat. Not everything needs or wants to be cooked at the temperature of hell.

Wow, looking at that pita bread rise like that brings back memories, i grew up watching this bread being made in grandfather's giant woodfire oven.
With respect to your bread.
The mistake you are making as I have made a million of these is that you are using a rolling pin.
If you want pita, then that's ok. But if you want a wonderful BREAD, you need to double the dough ball size and press down with only your hands, remembering not to crush the center. You can press harder on the edges. Its not necessary that it be circular. Even if its not a perfect circle it looks very artisinal.
Place the dough upside down. What I mean is when you lift the dough from the tray?The bottom of that dough on the tray should be the top of the dough when you place it in the oven. Cooks much better.
As it cooks you can spin the dough 180° to cook the otherside but place it further away from the flame.
As soon as you remove it from the oven, brush the top with Olive oil and sprinkle with malden/flake salt.
