I made bagels last week and used your recipe & did make 1 change to the boil, I added the baking soda & also added malt syrup, about 1/4 c and it definitely added more flavor….THEY WERE AMAZING!!! (Little bubbles all over the outside after baking) I tried several years ago to make bagels and they turned out awful (more cake like), not at all how NY bagels are supposed to be & to let you know just how yummy & appreciative I am, my sons girlfriend doesn't like everything bagels, butter (I also made your homemade butter) or cream cheese on them but THESE CONVERTED HER, SHE LOVED THEM & asked if I'll show her how to make the next time!!! 1 question: what's the best way to freeze them? Before baking or after & the best results for reheating after being frozen? If you could include that info in your vids it would be very helpful & greatly appreciated! I love these vids!!!

  2. Hey im sorry. But i notice your lips is.. urmm.. i dont know the word for english. But its kinda "pulled" to the left? Is that something to worry about? Did you had a stroke ? Or is that just the way you talk? Im sorry if its a bit sensitive for you.

  3. Dan, I just discovered this series today from your "Why We Crush" article, and I had to watch every episode back to back. Thanks so much for the recipes, techniques, and science! I'll not only be watching all these again while taking notes that I will always keep in mind in the future, but I'm going to dust off my copy of The Science of Good Cooking and put those lessons to better use.

    I hope you and everyone find some use and enjoyment out of my homemade whipped butter for making grilled cheese, burger buns, etc., which I posted on the grilled cheese episode.

  4. So according to you New York water and Boston water taste more or less the same. But I remember when I was in college in Southern Pennsylvania I couldn't drink water straight out of the tap because the high iron content made it taste like blood to my young and sheltered New England tongue. But if you were to use a tap water with that high of an iron or other metal content would it make any difference in your experience?

  5. I was just watching ATK with my wife and We both agreed that Dan needs his own show…
    Cut to few days later and you pop up with Babish, and I find out you already have your own show I’m just slacking
    So cool binged the whole 1st season
