  1. Hey Dan. I adore salmon, but for health reasons, i avoid the farmed variety. But my wild salmon always turned out dry. I learned from you to cook it to only 120 degrees in a low oven. Last night, i bakged the salmon at 325 until it read 120. It was most and awesome. So i thank you for this tip! Next time i will try brining.

    Is there a lower sodium method of brining? Thanks!!

  2. Great information about salmon. My experience with salmon is smoking large sides in an electric smoker. After a 24 hr. brine in equal parts sugar and salt they get smoked at 140 for an hour and cook for two hrs at 190. Why does the albumin leak out sometimes but not always ? I am using farmed salmon and sometimes cracks in the thickest portion.

  3. I’m more of a Vanilla Coke and popcorn kind of gal, but I can see the merits of cheese balls. Now, my husband, he’d be right there with you on cheese balls.

    After years of not liking fish I finally discovered I do if it doesn’t taste fishy. This makes me want to try a few different salmon recipes to try and expand the types of fish I will eat.

  4. I'm so disappointed, no discussion about grilling the salmon. It's my number one way of cooking salmon ( well maybe #2 considering how much I smoke salmon, hmmm, smoked salmon ) Anyway, grilling is so fast ,so easy, and so fantastic I'm just really bummed that you skipped right on past what is probably one of the oldest cooking methods for this king of fish. Sad, so sad.

I tell the story that I got fat the summer before 6th grade (what was I thinking!?) on cheese balls because I was in-active due to having my left arm in plaster cast … so we basically spent a summer doing the same thing. I am sure my in-activity had more to do with getting fat … but just because the cheese balls made me fat, I was still very excited when Planters brought back their cheese balls (the ones I got fat on) but relieved, after reading reviews, that they were not available to me at my downtown grocery stores … and I wasn't going to spend more than the retail price for cheese balls online that some very enterprising folks were offering for big money. OH, and my soda of choice at the time was Tab.
