The 160F is mostly a value to ensure everyone cook their meat well and reduce health risk. Like every guidelines, they are not for everyone or the people that knows more about the subject. They are for everyday people to be safe(r) l. There are a thousands of things you have, do or use that are way safer than they need to be
I have never seen anything coast up 20°. Especially fried chicken.
It doesn't even need to ever reach 160F. The USDA has a good guide on how long chicken needs to remain at a specific temperature to kill everything off. For example, chicken breast just needs to stay at 153F for about 70 seconds and it's safe, never reaching 160F.
