  2. I can say as a person who wears contact lenses, I can cut onions all day without any discomfort or a single tear. I've worn contacts for 40 years and realized this by accident one day when I took my lenses off before preparing dinner. When I chopped an onion my eyes burned and watered! So, if you wear contact lenses, leave them on until you finish chopping onions!

  3. I’ve been cooking for over 50 years and have tried many different ways to cut onions without tears. Nothing worked well except for one thing. I point a small desk fan towards my cutting board and put it on high while I am dicing. Haven’t shed a tear cutting onions since I started doing this a few years ago. Do what works for you.

  4. I absolutely love this recipe. Have made it over 10 times now. We love straining it a little towards the end of the leftovers and making a burrito with it! Excellent. So glad I found your page. Love the sheet pan eggs too! Great for meal prep breakfasts!

  5. I saw an Onion hack for no tears when cutting onions … place a damp paper towel on your cutting board next to where you are cutting the onion. The lachrymator compounds that are released when cutting an onion will be attracted to the paper towel and not your eyes.

  6. I have had a lot of chicken chili. I have made quite a few batches of chicken chili. What I have never experienced is a Chicken Chili this good. I followed your recipe to a T except I did kick the spices up a bit. My granddaughter goes right to the refrigerator for this chicken chili recipe as soon as she comes home from college. I took some to my wife that is in the hospital and she ate every bit of it and raved along the way. This is a KEEPER. Thank you very much.

  7. It never seizes to amaze me of how often while watching home chefs preparing raw foods while wearing jewelry!! Anyone who's ever worked as a commercial cook or otherwise should understand that this is considered a no no, presenting a safety hazard.

  8. Even though it's summer, we went ahead and made this (it sounded so good!). You're right; it's not spicy at all but has an earthy depth. I wouldn't change a thing although hubs says he thinks we should add in some roasted poblanos next time, too, and how could that ever be wrong! 🙂
