I thought I was weird because trimming down a 16lb packer brisket to a streamlined shape with just the right amount of fat to work specifically in my smoker (think heat flow and smoke) is therapeutic and almost art-like. That trimming skill in itself is a learning process.
i heard him say "8-10 thousand per week on brisket alone" 🤨 you say 10-15 thousand…did i miss something here? 😅
Love the channel and just subscribed. I live in Texas and will need to make a trip to check it out. I have a cabin in Cloudcroft NM and there is a place there called Mad Jack's. It reminds me of Goldees. They sell out generally in a few hours. The lines start over an hour before the place opens up.

3:33 as a former butcher, I am having doubts about how "fun" it would be haha. Not that I ever did any fine trimmings but cutting meat all day every day was a lot of things, "fun" was maybe not one of them 😀 Good work friends though!

no idea who the asian guy is, but Goldees does it right. In professional kitchens, if you dont know what your competition is doing, you're shooting yourself in the foot. Repetition is why they prep fast, thats how you get good repeatable results.

Goldee’s will remain in the top 10, but they have so many places gunning for #1 that staying there is unlikely, especially considering the fact that some of the people are now going their own directions.
Besides, Jirby has stated he is just as interested in getting people he has trained to get #1 or at least the top 10.

This place came from out of nowhere! Up until recently, it was pretty much all Franklins BBQ. Also, I like the Akatsuki Apron! It's practically begging for a BBQ-style ramen episode!
