  2. Random tip: it's not super important to try to kill off germs when dealing with beef. The primary contagion is Taenia saginata, which doesn't affect humans. Pork has T. solium, which is a much bigger problem, potentially causing neurocysticircosis, which we don't really have a cure for, so that's when you should really make sure you're killing off the germs. Chicken has salmonella, so you want to kill that off too.
