  1. Mmmm……from a simple batter perspective alone: soda water and plain flour (chill it) then drop those bad boy fillets into beef tallow. The worst way to cook fish is a thick fillet as it sits in the oil too long. Ask a farmer if they use canola oil and some of the worst F&C I have eaten is a beer batter lump of concrete. Sorry just my experience owning a F&C shop.

  2. Working in a kitchen with flip flops on is a big no – no. Your kind of of a slob – definitely not the best kitchen skills so your no pro and you hold the knife strange – what a mess you make on the cook top – get a counter friar – – – , but I do like the recipe although I would add a few tablespoons of malt vinegar to the batter, then it would be perfect.

  3. FYI for the chips/fries: it seems counterintuitive but wrinkly/soft potatoes work best. Hard ones have higher water content. Think of it like grapes. I would do the opposite that you did for choosing the potatoes
