So for chicken breast brine it for like an hour or two? Then could you marinade the chicken?
Can you pan fry the brined chicken breast for juicy chicken breast?
Only problem is it only takes that 0.0000009 % to make you unalive. Disinfectant state they unalive 00.9% of germs. Ok, something has a trillion germs on it that leaves a lot to ruin your day, and remember it only takes one.

If anything, that's an anomaly with your thermometer. The chicken should be roughly the same temp as the pan, which is the only heat source at that point which could raise the temp

Your calculation of salt content is wrong. A miscalculation can harm you body, if you cook for example with pink curing salt. The higher the concentration and volume, the more harmful it can be.
100% – 6% (for a 6% solution) = 94%
1000g (= 1 liter) / 94% = 10,64g = 1%
10,64g x 100% = 1064g.
So you have to add 64g of salt.
Anyone ever brine chicken with chicken broth instead of water?
@EthanChlebowski released a video, and he compared "air cooled" chicken, versus, "water cooled" chicken, and it completely changes the formula for whether or not to do chicken brining.
For the Americans out there⦠a 6% brine solution is one truck of salt to one jumbo jet of water.

I usually brine a whole chicken for like 2-3 days in the fridge and then let it hang hooked to dry out (kinda like Cured meat) for a day or 2. I have no idea if what I do is any good, but I feel that the chicken is extra crispy. I use a normal oven 250-350F, nothing fancy.

Add a little baking soda (like 1/4-1/2 tsp) and even a 15 minute soak will have a substantial effect on the tenderness. For chicken I recommend rinsing thoroughly before cooking or it does change the flavor a bit. It's a good way to make chuck or round steak fork-cut tender if you don't have time for braising or a pressure cooker.

just tried brining some breasts that I gave a mild pounding also, they came out amazing! I only let it soak for an hour in the wet brine. dried, coated with avocado oil and some seasoning and baked at 400 for about 30 minutes.

I made new breed Fayo Giant chicken breed.
I began by using 4premium strains Jersey Giant fed diet unlike any other@ a cost of $1,000 per bird. That 1st year I averaged 75g vs 64g egg size2 yield bigger stronger chick& fertility rose 35%.
Chickens get locked in DNA/color/shape gene pools like dogs due to ludicrous "Standards of "Perfection" rule. Crossbreeding dog makes much better dog. So, 1st I corrected this problem with 4Jersey bloods.
Chicken feed currently limits protein so egg not too big to fit a carton = tiny chickens we have today vs 25lbs 1900.
Feed is 20% innocuous brutal to digest seed coat saps chicken energy 2digest vs my birds ate 50% meat bone hide fur fish scales organs & all with greens salt spices garlic wood ash, sugar& sprouted oily dry corn.
My Jersey Giant initial new breed Gen1 emphasis focused on massive bigger then ave. leg strains 2forage much deeper with energy efficient calm demeanor they are tractors. They get many more insects.
Initial cost Gen1 averaged $28 an egg these breeders eggs ave. 64g with horrendous 45% fertility due to inferior feeds.

I tried to brine some chicken for over an hour and it seemed to work great, to keep it juicy. It still seemed a little on the salty side though still. I had it brine for about an hour so, maybe that was it. idk.
So I guess if youre brining then you wouldnt want to add any salt or even salted butter to whatever dish youre making? Or does the saltiness not sustain as much/get cooked out
