This worthy, crisp green is a versatile ingredient in everything from fresh salads to Italian soups. Here are some tips on how to prepare and cook it.
A member of the chicory family, escarole can add crispness and personality to plain green salads. Its broad, white-spined, curly-topped leaves start out light at the bottom and darken to a rich green at the top. Unlike frisée, whose leaves should be trimmed of their bitter tips, a head of escarole yields very little waste.
Escarole is also a key player in many Italian soups, including our Tuscan White Bean and Escarole Soup. Though escarole is less assertive than its cousins Belgian endive and frisée, its bitterness brings complexity to the soup. Also, its resilient leaves turn supple when cooked but don’t fall apart, and the base and spine of each leaf add a little texture. Look for heads bristling with sturdy, unblemished leaves.

Tell cary n.c.to have more STORES to get it.alot of stores don't even know what it is. Also not to cut off the best part of the escarole, the green part. Escarole and cantering beans ,or navy beans. Plus,Italian bread.

BE CAREFUL> They are making these beautiful bitter green lettuces like the Green Endive (also called Escarole) or Green Chickorey nowdays GMO's… I was horrified after eating a whole plateful 2 days ago, did not feel good all day yesterday… This is HORRIBLE, the spines are no longer pearlescent like they used to be, nor very shiny!

Besides adding personality by using Escarole, how about what it does for us nutritionally and what body systems it supports? I'm not asking you to play doctor and make any health claims, rather give us more than saying it's pretty and tastes good. Keep up the great work!

Cube prokbelly and render the fat. Mash potatoes with some of the pork fat, add finely chopped raw onion, porkbelly cubes and Escarole cut in small strips. Finish with vinegar, dijon mustard, some salt and white pepper and mix well. Then you have "andijvie stamppot", a traditional Dutch dish. Nowadays, many people substitute porkbelly with bacon cubes and also addcubed (young gouda) Cheese. Personally I like all versions.
