Celery root (also known as celeriac) boasts a crisp, firm, parsnip-like texture under its tough peel and a mild, celery-like flavor that sweetens with cooking.
WHAT IT IS: A variety of celery cultivated not for its stalks but for its knobby root bulb, celery root (also known as celeriac) boasts a crisp, firm, parsnip-like texture under its tough peel and a mild, celery-like flavor that sweetens with cooking.
HOW WE USE IT: A classic application is celery root rémoulade, where the raw root is grated or cut into matchsticks and tossed with a tangy mustard dressing. This versatile bulb can also be braised, baked, roasted, or made into a mash on its own or in combination with other vegetables.
DOES SIZE MATTER? We found that smaller bulbs (less than 1 1/4 pounds) had more flavor than larger bulbs both when sampled raw and when cooked simply in butter and water. The difference was more subtle when we compared smaller and larger bulbs in root vegetable gratin. We’ll seek out smaller bulbs when we’re using celery root on its own or in simple applications without a lot of competing flavors, but when adding it to a more complex recipe like a stew or gratin, we’ll use whatever is available.
TO PREVENT BROWNING: To avoid discoloration, place the prepped vegetable in acidulated water (1 teaspoon lemon juice or vinegar per 1 cup water).
HOW TO PREP: The tough exteriors of smaller bulbs can simply be cut away using a chef’s knife. Here’s a safe way to prepare bulbs larger than 1 1/4 pounds.
1. Trim stem end to create flat surface, then halve vertically. Lay flat on side and use knife to trim away knotty roots.
2. Using vegetable peeler, remove remaining skin.

Celeriac is a great addition to stews; it helps balance other flavors.
Celery root is delicious. Cook it the same as mashed potatoes and mix in a few potatoes. They are hard to find. I even pester produce departments to get it but they don't because there is not much demand. People are not educated on what it is. I finally found it at Whole Foods at a really high price. But . . . I just found it at a Mexican Produce store at $1.99 per pound!!! Now looking for more recipes for celery root.
so, WHY why should we cook with celery root?
Can't we just cook or steam or bake the celery root with the outer skin on & then remove it after it's cooked? It would be much easier that way.
Never had a celery root in my kitchen before . I plan on wrapping it with tin foil some butter and olive oil and sticking it on the BBQ Grill don't get simpler then that !
How expensive is a celery root?!? You couldn't afford to buy one to film this video? Also, you didn't even answer your own question: why cook with celery root? Very disappointing video.

Dan’s short tip videos haven’t been as good as the other presenters (goes too fast, doesn’t answer his own why question, no hands on demonstrations, this was about prep, not about cooking it…..), he did great science content, why did he stop for this?
I love most root vegetables, but celery root is my least favourite, I find it has a weird aftertaste. Or maybe it's cause every restaurant in Sweden seems to serve a chunk of celery root baked over night as a main vegetarian dish. I'm sick of it.
It is best if its cooked with orange juice. Try and you won't regret.
