Everything was going so well… until the radishes came out. Have you tried this with daikons? I don't like the bite of red radishes. Blech.

What I take away from this is 'You should not be cooking your steak in the oven if you want it to taste of steak.'

I noticed that the sturdy sheet pan, into which the lovely Ashley Moore loaded sweet potatoes, was warped.
Is that the same as wonky?
I usually do this same thing on the grill indirectly. Either in a pan or with a drip pan.

Very interesting recipe, but unfortunately I did not like the end result. The steak ended up being noticeably sweet and 'coffee-y' which was off putting. The steak did sizzle when I put it on the heated sheet pan, but browning and crust development was minimal. The sweet potatoes were good though.
No double searing on the other side of the steak? Gordon Ramsay would tell you to re-fire that again on a hot skillet

I lived in the UK for many years and made these meals on sheet trays. They are called tray bakes and everybody here is calling them sheet pan meals which is sort of a misnomer.
Can we please just stop with this insanity that cooking sweet potatoes like we cook regular potatoes is a good idea. It isn't. They always suck. Sweet potato fries in restaurants? Total garbage. soggy crap.

If you're not averse to using plastic bags, I like to use large ones for coating the veggies.
It save a dish and is a lot easier when doing the longer items that have trouble fitting the bowl/dish.
Cooking beautiful steaks like that without a proper char may work for some people, but it will never work for my family.
How is there no salt in this steak rub? Not gonna be good.
Nice try and if you don't know any better it may be fine for you – but steaks need a sear – and better yet – a flame! At the very least – Not much more work to take a saucepan from the stovetop into the oven for finishing.
