Just got back into grilling last Monday, I usually start grilling when every ember has white ash around it. I like using Lump charcoal, burns longer and hotter than briquettes. Could use both to get more bang for buck
This depends on the wood being used too, cherry, and applewood you can use quite a while longer before the smoke flavor is overbearing.

Over smoking sokes the meat in creosote which is acrid and numbs the mouth.

Yeah you want to avoid getting soot on the food. Use dry aka seasoned hardwood and let it burn down.
I learned this the hard way.
