How I made this Magic Protein Veggie Tofu Pasta 🧅🫑🥕
Ingredients:
For the sauce:
– 1 Red Bell Pepper
– 1 Zucchini
– 1 Carrot
– 1 cup Cherry Tomatoes
– 1 Onion & Garlic
– Salt, Pepper, EVOO & Herbs
– 250g Tofu
For Pasta:
– 1 cup pasta of your choice
– Salt, Chilli flakes, Mixed herbs & pasta water
Method:
– Place veggies and a whole garlic bulb on a baking tray. Drizzle with olive oil, season with salt, mixed herbs & pepper. Roast at 200°C for ~25 mins until beautifully charred.
– Once roasted, peel the garlic cloves and add them along with all roasted veggies to a blender. Add 1 cup firm tofu and blend into a creamy sauce.
– Cook pasta in salted boiling water. Reserve some pasta water.
– Toss the cooked pasta with the creamy tofu-veggie sauce. Add reserved pasta water & seasonings.
– Serve hot, topped with freshly grated parmesan & herbs.
