Salmon head is a popular ingredient in many asian recipes, and it tends to be fairly inexpensive in the west (since it’s mainly discarded)!

I find that such a huge waste because a great deal of the meat can actually be found tucked in between the cheeks, collar, and even on the forehead.

For this filipino sinigang, most of the flavor of the soup really comes from simmering the heads to make a delicious broth.

It’s complimented with the other veggies and tamarind paste to give it a nice tang, cancelling out a lot of the fishiness that you’d expect from a fish soup 👌

□ Tomato
□ Onion
□ Ginger
□ Green/red chilli peppers
□ Tamarind paste/concentrate
□ Fish sauce
□ Salt and sugar, to taste
