Kharcho or Xarcho: A Traditional Georgian Beef Soup

Ingredients:

Beef: 1.3 – 1.5 pounds
Rice: 1/4 – 1/2 cup (use more for a thicker soup)
Tomatoes: 5 ounces (about 2 medium tomatoes), finely chopped
Onions: 1 medium onion (for broth), 1 medium onion (finely chopped, for frying)
Parsley: 1/3 cup finely chopped
Cilantro: 1/3 cup finely chopped
Dill: 1/3 cup finely chopped
Butter: 1.5 tablespoons
Tomato paste: 1 heaping tablespoon
Tkemali sauce (red or green): to taste
Garlic: 2 medium cloves, minced
Bay leaves: 2 leaves
Khmeli suneli: 1.5 teaspoons
Imeretian saffron: 1 teaspoon
Ground coriander: 1 teaspoon
Vegetable oil: as needed
For the broth:

Carrots: 2 medium, whole
Onion: 1 medium, whole
Garlic: A few cloves
Celery: 2 stalks, whole
Black peppercorns: 1 teaspoon
Bay leaves: 2 leaves
