  1. Ingredients:
    Walnut Halves – 1/2 cup
    Water – 2 tbsp
    Sugar – 2 tbsp
    Salt – 1/4 tsp plus 1/8 tsp, divided
    Shrimp (U15) – 1 lb
    Egg White – 1 Lg
    Shaoxing Wine – 1 tsp
    White Pepper – 1/4 tsp
    Kewpie Mayo – 1/4 cup
    Lemon Juice – 1 tbsp
    Sweetened Condensed Milk – 1 tbsp
    Honey – 1 tsp
    Frying Oil – 2 qts
    Cornstarch – 1/2 cup

    Method:
    * Prepare bakings sheet with parchment paper or silpat.
    * Toast nuts in non-stick skillet for several minutes until fragrant and starting to color.
    * Into the pan with the nuts, add in the water, sugar, and 1/4 tsp salt and mix thoroughly. Cook, stirring, until nuts are caramel-y and sticky.
    * Remove into single later on baking tray and leave to cool for ≈ 30 minutes. Once cool and hard, lightly break nuts apart with hands.
    * Preheat fry oil to 425ºF
    * While the nuts are cooling, remove shrimp shells from shrimp (if applicable) and discard.
    * Whisk together egg white, wine, pepper, and remaining ¼ teaspoon salt. Mix together with the shrimp and leave to marinate for 15 minutes.
    * In a separate mixing bowl, whisk together the mayo, lemon juice, condensed milk, and honey.
    * Dredge the shrimp in the cornstarch and remove excess.
    * Fry shrimp, being careful to prevent clumping/sticking, until crispy and cooked through, ≈ 4 minutes.
    * Add fried shrimp and candied walnuts to the mayo mixture and toss gently. Serve immediately over steamed rice.
    * OPTIONAL: Add 25%-50% more sauce ingredients if you want things a bit juicier.

  2. I had a variation of this dish, Gran Marnier shrimp. Tasted similar to this except chef added orange flavor. Couldn’t quite discern if it was Gran marnier liquor and or some orange zest added to mayo sauce

  3. My favorite dish is Shrimp and Snow Peas in brown sauce with white rice. WOW. I eat it at least 2× a week. I love it so much. It's been my go to meal for at least 9 years now. I've started growing Mammoth Snow Peas so I get the biggest softest edible pea pods. Wish I had access to large shrimp. But here in the Midwest that's hard to find fresh.
