Mango Bango
(Holiday🎄Edition)

Summer is over, and winter is just around the corner. I’m all for the cozy soups and warm desserts, but sometimes I want to chill by eating a cold and creamy dessert. So when I saw green nata de coco gels at the market the other day, I knew I had to create a holiday version of this “typical” summer treat. Such a childhood fave! This is literally eyes rolling back delicious!

This super simple 5 ingredient dessert is creamy, perfectly sweetened and festive.

✨Full Recipe
No exact measurements. Below is what I used:
🥭 1/2 cup small tapioca pearls – cooked, rinsed + drained (follow package or use 1 cup water)
🥭10 oz ripe mango, divided (peeled and cubed or frozen mango chunks)
*6 oz mango chunks
*4 oz puréed mango
🥭 1 jar (12 oz) green nata de coco gel, rinsed and drained (sold at most Asian stores)
🥭 8 oz evaporated milk
🥭 8 oz condensed milk

✨Directions
Purée the chopped 4 ounces of mango chunks in a blender, then set to the side.

Next, bring 1 cup of water to a boil. Once boiling, add the tapioca pearls and continue to cook for about 10 minutes. Consistently stir to avoid burning or sticking to the pot. Turn off the heat, cover and let rest for about 10 minutes. Drain the tapioca pearls in a strainer and rinse the pearls while in the strainer to remove excess starch. Now, add the tapioca pearls to a large bowl.

Then add the mango chunks, mango purée, green gels and milk to the same bowl containing the tapioca pearls. Stir to combine well.

Serve immediately. For best results refrigerate for a few hours, or until slightly firm.

✨Helpful tips
*Filipino or similar ripe + sweetened mangoes are recommended. You can also use frozen mango chunks. Mangoes are not in season right now, and the ones I selected thinking it looked good, weren’t. So frozen mango chunks did the trick. The gels and milk will balance out the sweetness.
*You can use sugar jarred palm fruits or other fruit to give this a more festive look, but these 5 ingredients are just enough. It’s a mouthful of goodness. Trust me!
*Some use half & half or heavy cream. You can adjust the condensed milk and cream to one’s preference.
*This is best served when very chilled.
