Zero-skill CNY Recipe: Braised Chestnut Chicken with Abalone 鲍鱼栗子焖鸡 Chinese Lunar New Year Stew Dish

INGREDIENTS

For the marinated chicken
1kg (35.3 oz) fresh chicken, cut into bite-sized pieces
1½ tbsps oyster sauce
2 tbsps light soy sauce
1 tbsp Chinese white rice wine
1 tsp sugar
A few dashes of white pepper
1 tbsp cornflour
Other ingredients
35g (1.2 oz) young ginger, thinly sliced
1 bulb garlic, peeled
2 stalks of spring onions (use the stems first; reserve the leafy tops for the end)
1 star anise
1 small cinnamon bark
1½ tbsps premium dark soy sauce
1 can of abalone (use the brine for braising; add the abalone near the end of cooking)
300g (10.6 oz) chestnuts, peeled
1 can of button mushrooms, drained (optional)
