INGREDIENTS
2 cups (260 g) all-purpose flour
1 1/2 tsp baking powder
1/2 tsp baking soda
1 tsp coarse salt (1/2 tsp if using fine salt)
1 1/3 cup (265 g) light brown sugar (packed)
1 1/2 tsp ground cinnamon
2 cups (305 g) zucchini (grated)
1/2 cup walnuts or pecans (optional)
2 large eggs
1/2 cup (118 ml) cooking oil
1/2 cup (118 ml) milk
1 1/2 tsp vanilla extract
9 x 5 x2 loaf pan
Bake at 350ºF / 176ºC for 45 to 50 minutes or until a toothpick comes out clean
If using an 8 x 4 x 2 loaf pan bake for 55 to 60 minutes

  1. I'm 73 and I thought you should know that I've used your recipe for over two years at least 7 or 8 times. Raised about $400 for our church's cake raffle for our youth camp, also. It's a great recipe and there's a loaf baking right now. Can't wait!

    I’m back! Okay so this bread turned out delicious! It had a nice big crumb to it and was super moist. I added half a cup more of brown sugar because I was being lazy about measurements and I also added a little over 2 cups of grated zucchini because I didn’t know what else’s to do with the rest of the zucchini but despite my adjustments it turned out really good 👍🏼
