INGREDIENTS:
1 cup rolled oats (or quick oats)
2 carrots, chopped
¼ cup pecans
3 Medjool dates, pitted
2 tbsp almond butter
1 tsp vanilla extract
2 tsp cinnamon
½ tsp nutmeg
¼ tsp salt
Shredded coconut (for rolling)
INSTRUCTIONS:
Soak dry dates in hot water 5-10 minutes, drain & pit
Add all ingredients to food processor
Pulse until sticky & crumbly
Roll into 1-tbsp sized balls
Roll in shredded coconut & enjoy!
VARIATIONS:
Swap pecans for walnuts, almonds, or hazelnuts
Add raisins for extra sweetness
Roll in crushed nuts instead of coconut
Mix in chia seeds or flax meal for extra protein
ALLERGY SWAPS:
Nut-Free: Use sunflower seed butter + pumpkin seeds instead of almond butter & pecans
Coconut-Free: Skip coconut coating or use crushed nuts
Date Alternative: Use dried figs or apricots
STORAGE:
Refrigerate in airtight container up to 1 week. Freeze up to 1 month. Serve chilled for best texture.
