Cotolette al Forno 🍋
🇮🇹In Sicily, it’s not uncommon to skip the egg and skip the fry! These chicken cutlets are baked to golden perfection and finished with just a touch of lemon.

Ingredients:
🍗Chicken cutlets
🥖 Breadcrumbs (2/3)
🧀Pecorino Romano (1/3, freshly grated)
🌿Chopped parsley
🫒Bono Extra Virgin Olive Oil
🧂Salt & pepper
🍋Lemon (juice + zest)
Instructions:
1.Toss chicken cutlets with a generous amount of Bono Extra Virgin Olive Oil, juice from a lemon, salt, and pepper.
2. In a separate bowl, mix breadcrumbs, Pecorino, parsley, and olive oil to keep it moist while baking.
3. Coat each cutlet in the breadcrumb mixture and place on a parchment-lined baking sheet.
4. Zest a little lemon on top and bake at 400°F for about 20 minutes.
