Lamb skewers from Abruzzo, grilled over hot coals. Simple, rustic, and made to be eaten by the dozen.
Ingredients:
🥩 5 lbs boneless lamb shoulder
🧈 Lamb fat (if needed)
🧂 Sea salt
🥖 Crusty Italian bread
🫒 Extra virgin olive oil
🍋 Lemon wedges
🥬 Lettuce leaves (optional)
Instructions:
1. Cut the lamb into 1 cm cubes. If needed, cut up some lamb fat too.
2. Alternate meat and fat as you thread them tightly onto wooden skewers.
3. Grill over hot charcoal, turning often. Cook low and slow so the fat drips and the edges crisp.
4. Sprinkle with sea salt. Serve with toasted bread brushed with olive oil, lemon wedges, and lettuce.
