This time, I took a smoky, juicy pork butt and gave it the full Tocino treatmentâsweet, garlicky, a little red (okay, very red)âand smoked it low and slow on the Ninja Woodfire Pro XL. But I didnât stop there. I made a special Filipino relish called achara from scratch (pickled papaya never looked so good) and even whipped up a Tocino-inspired BBQ sauce. No coleslaw here, folksâweâre going full Pinoy on this pulled pork sandwich!
