Ingredients:
15.1 oz Bush’s taco fiesta side kick beans
15.25 oz can corn
1.5 lb ground chuck
1/4 cup taco seasoning
3-4 garlic cloves, chopped
1 small onion, chopped
4 oz freshly shredded colby jack cheese
4 oz freshly shredded pepper jack cheese
1 & 1/2 cups cooked white rice
10 oz red enchilada sauce
Directions:
In a pan add ground chuck, onions, garlic, taco seasoning, and sauté until meat is browned on medium to high heat.
In a bowl mix together cooked rice and taco fiesta beans until combined.
In a baking dish add the rice and bean mixture to the bottom of the dish, and evenly spread it out.
When the meat mixture is done, add it on top of the rice, and evenly spread it out.
Next add in the whole can of corn on top of the meat.
Then pour in the enchilada sauce over everything and shake the baking dish to get the sauce to coat the bottom.
Then sprinkle over the freshly shredded pepper jack and colby jack cheese evenly over the top.
Bake in the oven at 350°F for 25 minutes. Serve and Enjoy!!!
