📝 Ingredients
• 3 cups cut ziti (11 oz / 320 g)
• 1 medium red onion, finely chopped
• ⅔ cup ’nduja (5.5 oz / 160 g)
• 8 Roma tomatoes, peeled and chopped
• 7–8 fresh basil leaves
• 1 cup grated pecorino cheese (2.8 oz / 80 g)
• Salt to taste
• Extra virgin olive oil, for sautéing

👨🍳 Instructions
1. Prepare the Sauce
In a large skillet, heat a drizzle of extra virgin olive oil over medium heat.
Add the chopped red onion and cook gently until translucent.
Stir in the ’nduja and cook until fully melted into the onions, stirring occasionally.
2. Prepare the Tomatoes
Score the Roma tomatoes with a small “X” at the bottom and blanch them in boiling water for 20–30 seconds.
Transfer to an ice bath, peel off the skins, chop roughly, and add to the pan with the onion and ’nduja.
Add the basil leaves. Simmer for 15–20 minutes, until the sauce slightly thickens. Season with salt to taste.
3. Cook the Pasta
Boil the cut ziti in salted water until al dente.
Reserve about ½ cup of pasta water, then drain the pasta and add it to the sauce.
Toss everything together over low heat, adding a splash of pasta water if needed to loosen and bind the sauce.
4. To Finish
Plate the pasta and sprinkle generously with grated pecorino cheese.
Top with extra basil leaves if desired.
