I made “marshmallow fluff” just like this with five Splenda packets and about a cup of aquafaba. Definitely going to try with matcha when possible, but unfortunately theres really no way to keep it from destabilizing so I’ll have to eat it all in one go. The stuff filled up the entire stand mixer.
I make my chickpeas in an instant pot with dried beans. Is that water ok to use? If so, what ratio of beans to water? Anyone have insights on this one? Definitely want to try.

Looks great, but what is cream of tartar?
Does this only work with canned chickpeas or can you use the water that you use to soak dry chickpeas at home?
How do you come up with this stuff? Is this kind of traditional in a culture or trending?
